Kheer (Rice Pudding)
Ingredients for Kheer
Rice (would be better if its taichin rice) 1cup
Milk 1lit
chopped cashew nuts (Kaju) half tablespoon
Chopped Coconut half tablespoon
Clove 2-3 pcs
Raisin 6-7 pcs
Sugar 1tablespoon
Method
Wash rice in plain water
Mix milk, chopped cashew nuts, chopped coconut, clove, raisin and sugar in cooking pot and cook it for 10-15 minutes. For extra taste, you can add grated carrot in pudding.
Puri Bhaji
Necessary Ingredients
Wheat Flour 200gm
Steamed chickpea 1 cup
Sunflower Oil 50 ml
Chopped Onion 3 tablespoon
Garlic and Onion paste 1 spoon
Chopped Tomato 2 tablespoon
Curry powder, salt, cumin and coriander powder to taste
Chopped Green Coriander Leaves 1 tablespoon
Turmeric powder and chopped green chilli as required
Tej Patta (Bay Leaves) leaves
Method
Make dough out of flour by mixing it with water.
Knead gently the dough to make it smooth.
Separate the dough into smaller pieces.
Roll each pieces to give it a circular and keep on spreading the area of that dough to make it as thin as possible.
Heat oil in deep vessel and dip the flat flour in oil to make puri.
Next, add oil in heated pan.
Add onion and bay leaves in oil.
When onion changes to golden color, place diced potatoes and chickpea in oil
Pour turmeric powder, coriander, paste of onion and garlic,coriander and cumin powder, chilli and tomato to taste and cook it for 5minutes and vaji will be ready to be served.
Aloo Dum / Alu Dum
Aloo Dum is also famous recipe item for teej festival.
Necessary Ingredients
Steamed Potatoes 180 gm
Sunflower Oil 50 ml
Cardamom (elaichi) 5- 6 pcs
Cinnamon (Dalchini) 2 pcs
cardamom powder half spoon
Red Chilli 2 pcs
Tomato puree 50 gm
Chilli Powder 10 gm
Coriander Powder 1 spoon
Garlic Paste 1 spoon
Salt to taste
Soup Powder 1 spoon
Method
Wash potatoes with plenty of water.
Add salt to water and then poured those washed potatoes in it.
Steam the potatoes.
Pill the skin of potatoes and cut them in pieces.
Add oil to pan. When oil gets heated, pour diced potatoes in oil to fry those potatoes.
Take a different pan and then add turmeric powder,red chilli, cinnamon, garlic paste, salt and other spices in sunflower oil.
Add tomato puree to the spices.
Place already fried potatoes to the pan and cook them for 5 minutes.
Add soup powder at the end after everything is cooked.
Malpua
Necessary Ingredients
Maida Flour 2 cup
Milk 3 cup
Smashed Banana 2 pcs
Chopped coconut 2spoonful
Chopped Cashew nuts 1 spoonful
Raisin 15 pcs
Sooji (Semolina) Flour 1 spoonful
sugar 2 cups
Cardamom (elaichi) 4 pcs
Water 3 cups
Ghee 1cup
Method
Add milk to the mixture of maida flour, banana, coconut, raisin&sooji flour till it become thick and viscous fluid
In separate vessel, prepare a syrup by adding sugar in water
Now, prepare malpuwa by pouring small amount of that viscous fluid in heated oil
When Malpua is prepared, dip it in a syrup for one minute before serving.
Bhatare
Bhatare is the most popular dish in Nepali teej.
Ingredients
Rinsed Rice grains
Ghee
Method
Soak rice grains in water about an hour prior to cooking Bhatare
Heat pure ghee in pan
Pour soaked rice grains in ghee and stir it well
Add water to the rice grains in a way that the rice grains are just dipped in water
Cover the rice for few minutes.
Remember to stir rice in every few minutes till it is fully cooked.
